luana was asked by the organisers of the sur le lac festival if she would like to set up a vegan/vegetarian food stall. she accepted the challenge and chose a morrocan plate based on couscous with vegan side dishes such as baba ganoush, almond sauce, a tomato-cucumber-spring onion salad and an oriental apple-pear chutney. non-vegans were served a yoghurt sauce with herbs. the plate was topped with smoked paprika, coriander, olive oil and pita bread. except for the bread, everything was homemade. of course, she didn’t miss the opportunity to set the scene for the stand. a great experience all round!
